introducing their First-ever Diabetic Friendly Biryani starting 23rd July, 2025. This special offering
caters to Kolkata’s growing health-conscious population, especially diabetics who are looking to enjoy

dining. Renowned actor Soham Chakraborty along with Dt. Nidhi Prakash, well-known dietician &

Carefully crafted by Dt. Nidhi Prakash, the Diabetic-Friendly Biryani Menu features two unique options:
Diabetic Murgh Biryani and Diabetic Subz Biryani. Each dish is crafted with a balanced macronutrient
profile and is prepared using traditional Awadhi methods and fragrant spices, ensuring a minimal amount
of carbohydrates and fats.
“Diabetes is increasing worldwide at an alarming rate. According to ICMR-India, in 2015 – total number
of Type 2 Diabetic persons was 69.2 million which has increased to 101 million in 2024. In West Bengal,
staple food is rice and Bengalis love Biryani. Usually, biryani is made with white rice, potato,
chicken/mutton, oil and spices. The idea of preparing Diabetic Biryani came to me some 6 months ago
and I started working on it since then. The aim was to reduce the Glycemic Index and Glycemic load of
white rice-based biryani. I decided to use Parboiled rice for the purpose. I also replaced potato with
sweet potato. Veg biryani was made using soya chunks and lots of vegetables. With such modifications,
diabetics can enjoy Diabetic Friendly Biryani without significantly impacting their blood sugar level”,
